What goes wrong with a built-in oven
Three faults account for most of it. Temperature that reads right and cooks wrong is usually the oven sensor drifting rather than the element failing — an element that has failed generally announces itself visibly. A door that no longer sits flush is hinge and spring wear, and it costs you heat continuously rather than dramatically. And a self-clean cycle that will not start or will not release is the door latch mechanism, which is the single most common reason an oven is written off unnecessarily.
In older Concord houses there is a fourth: ventilation. An oven built into a run in a low-ceilinged rear ell, with a cabinet directly above and no relief, cooks its own controls over the years.

Safe to check, and what is not
Safe: the door seal for gaps and hardening, the hinges for play, whether the cavity light and the controls respond, and whether the breaker has tripped. Not safe and not worth attempting: anything behind the control panel, any gas connection, and any attempt to force a latch that has locked during a clean cycle.
